Control the fire,
then the meat.

Dry brisket is almost never the recipe's fault. It's a fire that swung sixty degrees, a probe in the wrong place, or a cook pulled by the clock instead of by feel.

How we work

No gear to sell, no secret rubs

Avenddo sells nothing — no rubs, no wood, no cookers — and takes no commission from anyone who does. Good barbecue comes off cheap kettles all the time, and expensive smokers produce dry brisket every weekend.

We follow published USDA safe temperatures and we're clear about our limits: we're not a food safety authority, and if you plan to cook for sale, licensing and health department rules are a conversation for them, not for us.

Frequently asked

The questions we get most

Do I need an expensive smoker?

No. A kettle with two zones cooks excellent barbecue, and we coach on whatever you own. We sell nothing and take no commission.

Why does my brisket come out dry?

Usually pulled by time rather than feel, or rested for twenty minutes instead of two hours. Send your temp log and we'll tell you which.

Is a pellet grill cheating?

No, it's a different tool. It automates fire control, which means we spend your coaching time on trimming, seasoning and timing instead.

What about food safety?

We follow published USDA temperatures and cover safe holding. We're coaches, not inspectors — for cooking commercially, talk to your health department.

Can you help during a cook?

Yes, on the event plan. A check-in when the stall hits at 2 AM is often exactly what people need.

Can I cancel anytime?

Yes. No contract, no minimum term. Access stays open until the end of the month you already paid for.

Got a cook that didn't work?

Twenty minutes on your temps, your slice and what went wrong. Free.
